Easy Roasted Sweet Potato Bites

Let's talk Sweet Potatoes, they are so in for your 2019 BOD goals!
 
Looking for a yummy, nutritious side dish for everything from steak to grilled chicken to rice bowls to salads? Load up your grocery cart with sweet potatoes, because you’ll be making these easy Roasted Sweet Potato Bites often. 
Sweet potatoes are the saving grace of anyone who knows they need to add more vegetables to their diet but is over steamed broccoli or cucumbers.
Their natural sweetness lends itself to a variety of dishes, but it’s not all about great taste and a pop of color on your plate: Sweet potatoes contain a ton of beta-carotene, which converts to Vitamin A to helps ward off free radicals that can cause chronic diseases. It helps support your immune system, reduce inflammation, promote healthy skin, and maintain healthy vision.
Now, we’ll level with you: Sweet potatoes wouldn’t be sweet without a little natural sugar (6g per 1 cup, raw/uncooked). This is nothing to worry about! Sweet potatoes are actually considered low on the glycemic index compared to regular white potatoes, so you break down their sugars in your blood at a slower pace, preventing a sharp spike in your blood sugar that can leave you lethargic and your workouts lacking.

Easy Roasted Sweet Potato Bites


Ingredients
2 large sweet potatoes
2 tbsp olive oil (or melted coconut oil)
1/2 tsp sea salt
1/4 tsp garlic powder
1/4 tsp dried oregano
1/4 tsp dried basil
1/4 tsp dried parsley
1/8 tsp fresh ground pepper
1/8 tsp cayenne pepper
* Add onion for taste

Directions
Preheat oven to 425 degrees. Scrub sweet potatoes to remove any dirt and pat dry.
Leave skins on (no peeling necessary!), and cube potatoes.
In a large bowl, stir together the oil and spices until well combined.
Place sweet potatoes in the bowl and toss well to thoroughly coat. Spread the bites on a large baking sheet and bake for 20-25 minutes until lightly browned.

Makes 4 servings

Cajun Sweet Potato Bites

1 ½ tbsp sea salt
1 tsp oregano
1 tsp paprika
1/2 tsp cayenne pepper
1/2 tsp black pepper
1/2 tsp onion powder
1/2 tsp garlic powder

Fajita Sweet Potato Bites

1 tsp chili powder
1 tsp cumin
1/2 tsp coriander
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp oregano
1/2 tsp paprika
1 tsp sea salt
1/2 tsp black pepper

Pumpkin Pie Sweet Potato Bites

2 ½ tsp cinnamon
1 tsp ginger
1 tsp nutmeg
1 tsp allspice
1/2 tsp ground cloves

But First, let's discuss the benefits of pumpkins. I mean, sure it's perfect for Fall and gives us all the cozy feels, but pumpkins are way more than that!
They are rich in vitamins and minerals particularly vitamin A. Vitamin A is a total win here at our BikiniBOD headquarters because it helps strengthen our immune system and helps fight infections. So you can kiss that Fall cold right to the curb by adding this pumpkin spice smoothie to your daily routine. 1/2 Cup - Canned Pumpkin
1 Cup Almond Milk
1/2 TSP Vanilla Extract
